Almond Cheesecake
Most ingredients can be obtained
as organic.
500 ml – 2 cups chopped
almonds
60 ml – 1/4 cup melted butter
2 pkgs (8 oz. each) cream cheese
125 ml – 1/2 cup sugar
5 ml – 1 tsp vanilla
2 eggs
3 squares (3 oz – 85g ) white baking chocolate
Mix only 1 3/4 of chopped almonds
with melted butter. Press crust mixture into 9 inch pie plate.
Put aside. Mix cream cheese , sugar until blended. Add vanilla
, eggs, and mix well. Add melted white chocolate and leftover
almonds in mixture. Pour on almond crust. Bake at 350°F
for 35 to 40 minutes. Refrigerate for 3 hours or overnight.
Serve.(Yield 10 servings)
