Cappacino Chocolate Cheesecake
Most ingredients can be obtained
as organic.
500 ml – 2 cups Chopped
almonds
60 ml – 1/4 cup melted butter
2 pkgs (8 oz. each) cream cheese
125 ml – 1/2 cup white sugar
5 ml – 1 tsp. vanilla
2 eggs
2 tbsp. strong coffee
3 squares (3 oz – 85g) baking chocolate
1 cup cranberries
Mix chopped almonds with melted
butter. Press crust mixture into 9 inch pie plate. Put aside.
Mix cream cheese and sugar until blended. Add vanilla, eggs,
and mix well. Add melted chocolate and coffee. Mix in cranberries.
Pour on almond crust. Bake at 350°F for 35 to 40 minutes.
Refrigerate for 3 hours or overnight. (Yields 10 servings)
